Subha's potato curry
5 potatoes (boiled and mashed)
1 cup frozen peas
2 tbsp chives (or chopped onions)
1 tbsp grated ginger
1 tbsp minced
cannola oil
pinch red chili powder
pinch of turmeric
salt
pinch asafoitida/ hing powder
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1 dried whole red chili (chopped)
1/2 tsp urad daal
1/2 tsp channa daal
2 tsp curry powder
Heat oil in large pan/wok and add mustard and cumin seeds, daals, chili, asafoitida and curry. When seeds start spattering, add ginger and chives, brown lightly. Add peas and potatoes and the rest of the ingredients. Brown potatoes and peas, serve. Can add cashews or peanuts.
