That's a good idea. However, the whole reason the service is free is so they can data-mine as many customers as possible. If encryption becomes widespread, they may start charging for it.

 

More likely, only a few people use encryption and almost everyone gives away their private data to google, potentially resulting in some embarassing situations. Obviously google wants to sell derivatives of your information to 3rd parties, whether they be your interests, work patterns or similar.
