I don't think Sony would miss their supply target on purpose. It was a pretty aggressive target, but if they missed it, it would be supply related rather than demand related. They couldn't care less if half the stores are stocked... they'd prefer it. Nintendo's numbers are shipped rather than sold as well.

Untrue, out of all the hw companies Nintendo is the most straightforward regarding these numbers. Their most recent report of 3million DSes sold (not shipped) within the UK for example.
