To the OP, both titles will be absolutely fine. There is no cannibalizing environment on Xbox 360. Fable II and Fallout 3 co-existed. Halo 3 and COD 4 co-existed. COD 5 and Gears 2 co-existed. There is always room for games that appeal to similiar demographics to sell.

No, you're totally correct. I didn't realize GTA IV increased so much on PS3. I stand corrected. Something is very off with PS3 owners and their buying habits.

My point, which I guess I didn't properly flesh out, is that while multiplats may have more selling potential overall, their worth is diminished by the fact that they are multiplatform in the first place. Someone does not need to buy a 360 to own COD4 but they do to play Halo 3. If COD4 were to be only on 360, it's worth would probably go up on that console. The same as if Halo 3 were multiplat it's ability to sell a 360 would be diminished as there would now be a choice of what to purchase it for.
