If you have a seperate partition or hard drive, you ought to be okay as long as you don't select the option to 'upgrade your current Windows' and instead do a fresh install.
I believe it'll also ask you which version of windows you want to boot when you start your computer after you install it. One being Windows 7 and the other being "Previous version of Windows". Just make sure to have the install disk for your current version of windows so you can get rid of the booting menu after you get rid of the Windows 7 beta.
