Seriously, Thrill Kill for PSX. I have played "copies" -- it was years ahead of its time with its fighting mechanics. It was also excessively violent.

Half Life for Dreamcast. I mention this because there are rumors (from an EB store manager) that it made it to the stores -- only to be pulled an hour later. I cannot find anything to support this.
