I have a 1080P TV but I have my 360 set at 720p, I have noticed a definite performance hit on some titles, it's a peace of mind thing too. Visually speaking there is minimal difference and to be perfectly honest I think with this generation at least, 1080P is a con, nothing more than a Business Word that sells. The 360 and PS3 just aren't powerful enough to handle truely detailed visuals at such resolutions and run them smoothly.
I had a RB2 session with 3 other friends a couple of weeks back and 1080P definitely affected that badly. On some sections the frame rate jumped well below 30FPS and it meant for alot of missed notes.
