If you want color try Uncharted or Crysis: As the most beautiful jungles ever put on a computer monitor. (Hint:GREEN)
Alternatively take Assassin's Creed for a really breathtaking display of ancient cities in brilliant daylight.
What about GTA4? A game that replicated New York with an amazing amount of small details. Simply beautiful esp. when you have been to New York a couple of times, to see the little changes, even if it is not the technical best game ever.
Resistance2 is colorful, Motorstorm uses a definitely not grey island as racing ground, GT5-P or Forza provide almost photorealistic cars ...
The everything is grey or brown argument is simply ignorant. Grey and dark is simply the matter of choice if you want to provide a scary atmosphere as in horror games. The colours of a rainbow would be a bit stupid for an Aliens game or movie.
Besides if you say that great graphics add nothing to a game then I cannot help you. Its simply nice to see something beautiful. Because of that people like to watch opulent movies instead of hearing podcasts. After all both media could propagate the same story.
