Some games like Uncharted added support for this, but mostly to solve issues regarding old 1080i-only sets, it doesn''t affect the in-game assets though, but of course looks a lot better than 480p. For newer HDTVs 720p is just fine to work with.
Although vertical resolution is more important, IMO when creating a real 1080p game 1280 x 1080 makes more sense to optimise for, horizontal resolution is the same as a 720p high definition game but on a FullHD screen there will be well more details.
