why most ps3 games are 720 instead of 1080p?????????????

A lot of the games do go to 1080p, just do what I did and disable 720 output on the HDMI settings (R&C, Dead Space etc, but some are native 1080 like GT5:P)
Most of this can be blamed on the developers though.
