It depends.

If your 1365x768 TV doesn't support 1080p then the 360 or the PS3 can't give it a 1080p signal. If your 1365x768 does support it then the consoles can give a 1080p signal then the TV will downscale it to 1365x768.

Anyway the best for a 1365x768 TV is to set you consoles to send a 720p or a 1080i (if supported by your TV) signal.
