I don't use the pitch either, never got how it benefitted other then in the air not just hovering Oddly, while playing I've noticed I have an easier time when I'm in cockpit view then when I'm viewing outside of the vehircle. I seem to take corners that bit earlier making them tighter, this was good for time trials. Although can get a bit much as everything seems to move past real fast, especially on faster speeds.
Just learn the tracks and you'll do fine.
