1080p is called FullHD, Blu-Ray movies are in FullHD quality. Before launch Sony marketed the PS3 as a platform supporting games in resolutions "up to 1080p" as well, which does not imply 1080p support would be mandatory, actually to the contrary.
Dolby True HD regards a high quality audio format.
From a hardware perspective the PS3 is superior and this will show more and more in PS3 exclusives (as many believe this is already clearly the case) and porting efforts will likely become better and better, if the project is ambitous enough cross platform titles will probably become clearly better on the PS3. I wouldn't be suprised if for example Crytek would be able to do more with the PS3 than they can on the 360 (their game engine is heavily multi-threaded).
