That's it's biggest issue. I love the PS3 but a lot of multis lack the anti-aliasing that it's 360 counterparts have and that all boils down to the GPUs of both consoles (yes the 360s is better), however other recent multis have not suffered from this on PS3 i.e. NHL 2009, Madden 2009, Fifa Soccer 2009, some of these yes I'm judging by their demos but NHL 2K9 is one multi recently that still has those issues.The PS3 has more processing power however so it's exclusives set it apart from 360 games as they should. IMO Uncharted and MGS4 are hands down the best this generation has to offer followed closely by Gears of War. But it's all a matter of taste, each console be it PS3 or 360 has it's ups and downs. PS3 excels in animation and Physics, whereas the 360 excels in textures due to PS3's lack of video memory. The 360s 512mb of RAM are solely used to push textures, even though like I said Uncharted is an example of PS3's (PIXEL PUSHING POWERS)!!! But in terms of anti-aliasing the 360 has the advantage.

To be honest I looked closely at the AA of both systems and it looks about the same. Neither version have aliasing issues so a little bit more or better AA on the Xbox 360 version which is what I saw is unlikely to sway people either way.
