actually.. i think 360 is limited by dual-layered discs too, so it may very well be the 360 version holding back the content of the ps3 version.. that said, extra modes wouldn't nearly take up more room than graphics unless new sounds/textures are required

 

Both 360 and Wii can read dual-layer DVDs. I once read that 360 DVDs give up a large amount of space for DRM though, but take that with a pinch of salt until someone else here can clarify it.

The extras thing with the Wii is probably a little from column A, a little from column B, and maybe some smoke bombs from those who understand Nintendo's disruptive policies.
