EA introduced that in like 2003 (or before), it's called "playmaker". You take one of the analog sticks and point it in any direction and a reciever will break off from the play and run to that location while the linemen will block down the field for you in that direction, just like in the NFL.
I personally didn't like the mechanics of that feature, it almost seemed like too much work and was typically used only in a situation where the pocket is gone. I can't imagine how pesky it would be to have to aim on a specific location with a pointer on the screen while keeping an eye out for blitzes or interceptions. Either way, the only QB that can really take advantage of those out of pocket plays are Michael Vick.... and he's in prison.
