If they remove the Wi-Fi they're likely removing the Bluetooth capability which means that the Dualshock 3 controllers would need to be plugged directly into the system as well as most other accessories not working with the system. Bad Idea & would mean you'd actually need MORE USB slots than systems are currently shipping with (2).
10 or 20GB Hard drives (as you suggested) are actually cost prohibitive. At least in the 2.5" form factor. Those sizes of hard drives aren't seeing the same size manufacturing runs as say 80GB or 160GB and as such will run a much higher $/GB ratio. This is part of the reason they got rid of the 40GB when they did.
You can't remove any more USB slots because people still need to be able to charge their controllers & accessories.

The PS3 has shipped with a 2x Blu-Ray drive since launch. A 4x Blu-Ray PS3 would be AMAZING though. I'd sell mine and get one of those in an instant.
