Sales do dramatically increase, but so does the competition. Not only are their more titles to contend with, but many more high quality titles. Which is not a major issue if your looking to only sell four hundred thousand copies of a game, but if your looking to sell millions of copies of a game then there is a solid logic to deferring the game into next year. When it can be the premier game of the month, and might net over a million in sales.
This happens every year a few good games slip the bonds of the holiday season so they can make more money in the new year.
