Ultima online (literally spawned/popularised the mmorpg genre).
There's lots I'd love to put on the list that aren't influential enough. Like for example Planescape torment.
I'll ponder this further.
BTW Neverwinter nights isn't an mmorpg.
EDIT System shock 2 wan an fps/rpg hybrid. It had loads of atmosphere. It was the game that inspired bioshock, though system shock 2 is still arguably supirior in a number of ways.
