F-Zero GX is definitely the hardest game I've ever played (and anybody who's ever suffered through Chapters 5 and 7 of the story on Very Hard will probably agree). For that game, though, you can actually feel yourself getting better with practice, so the uphill climb doesn't feel quite as steep.
