Game saves shouldn't be a problem and you can always delete old saves for old games you don't even have anymore (if you buy/sell/trade games a lot).
I *believe* *(could be wrong) you can only use the special 360 hard drives unless you do some fancy finagling but you can get them cheap on eBay and places like NewEgg.
