Yeah but how many times are you honestly going to have to do that :P Once you get the tools down for the PS3 it's just as smooth as every other console. The initial engine work is guaranteed to be a bitch and a half, but after that I could immagine much smoother sailing, it's been said by so many of the "only PS3" dev's. And like you mentioned, the PS3 doesn't run un-optimized code very well, but the 360 can read the PS3 code just fine, all the more reasons to lead with PS3 I say :P
