Three is too few to list, so I would have to go with the ones I believe to be more deserving (Coincidentally, they happen to be Wii games. If LBP were coming out this year, it would have been on my top 3, no doubt)

The Legend of Zelda: Phantom Hourglass
Metroid Prime 3: Corruption
Would have replaced MP3 for Halo 3, but I feel MP3s controls make it stand out.
Mass Effect seems to be a revolutionary RPG for the 360, but it is still a wait and see how it plays out.
As for PS3, I would put Uncharted. The visuals are stunning, and it is one part Gears of War, one part Tomb Raider, and one part Prince of Persia. This hybrid seems promising, but I still have some doubts. Again, I will see how it plays out.
Assuming this thread is still alive by then, I could revise my list after all are released.
