They're much different from Zelda, and I can't really see Zelda ever having turned into an Ico/SotC-like series under different circumstances, but I'd love for Zelda Wii to adopt some aspects of SotC/Ico's controls. Wander and Ico were both far more mobile than Link, and it'd be great if they could combine Link's swordplay and defensive maneuvers with Wander/Ico's general maneuverability. Adopting (and improving upon) Agro's controls would be awesome as well (particularly adding a "trot" phase between "walk" and "gallop" :P).
