Developing for every appealing platform is OK. Pissing off their up until last gen main public isn't. While this time XB360 potential public is currently still bigger than PS3 one, they are on the same order of magnitude, and smaller than Wii user base, so, if Wii isn't powerful enough for their game, they need both "hardcore" consoles.
And given that PS3 user base fidelity is certain, while XB360 users appreciation is still a big question mark, it's right that SE tries to lure new gamers, but pissing off the old ones is a very bad move. If they want both platforms, with a game that already generated so high expectaions, they must commit themselves deeply to both versions and invest all the money necessary, FF is their most renowned product, a shaggy release on either platform wouldn't be a disaster for either Sony or MS, it would be for SE.
This said, Sony would better create or buy or finance for exclusive his own big JRPG (or even more than one), japanese market is important for japanese consoles, it's their little but significant, faithful, exclusive advantage to start from towards world market domination.
