I don't see why you wouldn't get a 360 if you like all of these JRPGs. You can always pick up a PS3 later if you really feel like you're missing anything.

I'm pretty sure I won't buy a 360 and a PS3, since 90% of the games will come to both platforms. And I seriously don't have enough time to validate 3 consoles.
Really the only thing holding me back from buying a 360 is the quality of the hardware. I always buy quality stuff and I hate it when things break down. My most wanted games are multiplat anyway: RE5, Beyond Good & Evil 2 and FF13.
But Star Ocean, Lost Odysse, Blue Dragon, Vesperia, IU etc are definitely on my list of games I really would like to say and I do consider the 360 library superior to PS3's, but PS3's don't die.

Well, it's a choice between buying a console with a large library of games you want but it may break once a year with a long warranty and a very easy way of getting a replacement, or a console that will never break but you will play a lot less. Easy decision really.

Of course, there's also the argument that many of the 360's exclusives will go multiplat eventually (SO4 and ToV, much like FFXIII and Eternal Sonata - SE and Namco have set a precedent), while Sony's robust 1st/2nd party line up will always stay exclusive to the ps3 (LBP ftw).
3rd party exclusives are pretty much dead from this point onward, with the few that are left being released before the end of the year, most of which are probably just timed. After that, it's left to 1st and 2nd party developers, and in this area Sony and Nintendo >>> Microsoft.
But I don't want to derail this thread, so I'll leave it at that. :P
