No effect whatsoever.
People buy the SNES remakes because they were not there at the time and because the changes to 3D and cutscenes are significant, but with the PS2's BC, I hardly see why anyone would not have played FF7 already if they wanted to and I don't see how better graphics will change playability or anything.
