Probably because the tradition has been a Fire-Water-Grass trio of starters. Pokemon Yellow was subtitled Special Pikachu Edition for a reason, it was special, and probably won't be done again. Even if they remade Yellow, since it was based on the anime, it would just feel weird if you started with a Pichu. I do get what you mean about the 3 evolutions, but it'll probably never happen in a main game.

Unless they shake up the traditions.  But let's be real here, there's no way they're shaking that one up :P
