Fallout New Vegas + DLC, Love Fallout New Vegas, There are so many quests that have massive impact on the ending packed with choices and great characters, the story is really good and base on your choices essentially you decide which factions live or die and which side will win the war. You will meet some great personalities and see cool and crazy things in your Fallout NV travels.

Fallout 3 - Not as good as new vegas and lacks the same depth and choice impact but quite a different game set in a darker setting in a region more effected by the Nuclear war, but still a very good game.

Dragon Age Origins - Better on PC due to controls but still playable once you get use to it on console, If you enjoy the fantasy setting and choice in games I would recommend giving this one a go.

Alpha Protocol - An espionage RPG, Although it's not everyones cup of tea and the game lacks in production value and polish at times it still is a really fun game, The way you play is entirely up to you and how you upgrade your character and the story seems initially generic but get's a lot better later on, depending on what you do and the order in which you do it your likely to have a wildy different experience than others, some may betray you some may die.

The Mass Effect Trilogy - Although losing most of it's RPG elements in the second game it's really worth giving these games a go. No game has given me such a great bond between the characters, where I actually really care a about what happens to them and such emotional impact from events taken place, the choice impact isn't as great as it seems with shortcuts taken in ME3 causing a lot of decisions from ME1+2 to boil down to very little but it still is a brilliant game series with fun action packed gameplay an and has fascinating story and universe.
Also Martin Sheen Plays a prominent role in the second and third games, so that's always awesome.

Note: Leviathan DLC and Extended Cut are an absolute must to enjoy Mass Effect 3's Ending.

I like the gameplay in New Vegas (its certainly miles above Fallout 3) but the story is only decent in my opinion.Overall, its a really, really good game though and I would easily recommend it!

In all fairness though, I'm not a huge fan of the post-apocalypse theme as a whole, same goes for sci-fi (at least the cheap kind we have today).

I loved the story, Its well written, serious (and funny when it needs to be), the way forces you to make really tough decisions (fuck you Mr House). Plus the staggering amount of choices, characters, dialogue and ways to build your character adds for a insane amount of replay. The gameplay was the part that needed work imo. The world also isn't always as fun to explore as Fallout 3. Its too bad we most likely will not see another fallout from obsidian, after Skyrim i have my doubts about another Bethesda Fallout. 

 

But yeah post apocalyptic/New Vegas isn't a game for everybody.

Well as far as the Xbox 360 is concerned.

Lost Odyssey perhaps has the best story, and character development this generation for the genre. Most of the key players have rich deep stories, and it is both poignant and philosophical. With commentaries on immigration, solitary confinement, pollution, and corruption. The game has a robust over world, and a modest party size. There is enough to play around with character wise, and a lot of challenging side quest boss battles. Easily a hundred hours if you are of a mind to do everything.

Blue Dragon has a truly massive over world, and a large amount of physical real estate. It will take you close to two hundred hours to do it all, and you probably still won't be done leveling up. It takes between thirty to forty hours of pure exploitation of the leveling system just to max out your characters, and I am talking about running a macro, and rubber banding your controller. The story is sadly on the weak side as it is predictable, and the total number of playable characters is on the small side.

Infinite Undiscovery is actually almost overkill when it comes to available party members, character building, and inventory management. If you like having a lot of choices, and love micro management this game is for you, but it isn't really mandatory. This is a action role playing game, and you can get by with the minimum amount of real effort. It can be rewarding, but if you just want to bull rush the game you can get through it in about forty hours. The story is just a bit above average, and character development is on the weak side. However the world is pretty big. There isn't a over world so everywhere is playable real estate.

Anyway there is three hundred plus hours of role playing goodness there for you.

If your interested in mods, NMC's Texture pack and Neveda skies will really shine this game up because the graphics are shit. Also 4GB new vegas. 

After you beat the game, just add more from there. Hope you like it.
