I love it when I race against people online on Rainbow Road and they seem to fall of the stage and never do fall >_>. WTH is up with that?

No idea, but dannnnnnnnnng - just entered your room; I normally win when against people of my own point ranking (~2000), but you guys were unstoppable lol xD I was ahead for about half a lap, made a small mistake and suddenly I'm in 7th o.o I have a long way to go :P

I either do really good or really poor on it. All the falling tend to happen in batches.

It's probably also because I don't memorize any tracks, though.

Small mistakes costs you races, but things like getting blue shelled constantly can also seriously fuck your shit up  

Plus, a big factor of luck is involved in these races. If you can be ahead of the pack or in the top three places, the chances of getting pelted by items is smaller than being in lower places, where shit just gets hectic.
