8GB RAM vs 16 GB RAM?

I've been thinking about doubling up myself lately but don't wanna overpay. The same RAM I bought last year for $30 costs $70, now. 8GB of DDR4 (+6GB GDDR5) has been fine for 1080p thus far, though.
