Yeah, if Bloodborne can work ok with similar and often worse performance hitches, I think Breath of the Wild will be fine.  

Also, as Digital Foundry mentions, other open world games on similarly powered hardware like GTA5 and Skyrim have worse performance problems but were still generally very well liked. Hell, Witcher 3 on PS4/Xbone suffers drops to 20-25fps too, and it won 250 GOTY awards.
