Max - he doesn't even know these people and yet started caring within a day of meeting them? Why? Because a ghost told him to help them. That ghost thing was so silly. I don't really remember most of the stuff, so I won't argue with most of what you said. But about Mel's Max staying "true to his character from start to finish", the way you put it it's like the actor decides the plot or something.

And yes, they did grow a lot, I'm not sure how you couldn't realize that. At the beginning of the movie, they looked really weak and incapable of doing anything without Furiosa's help, while at the end they were playing a big part in the battle and doing stuff on their own. It was very clear.

I think you're forgetting the wives fighting Nux when they are first encountered with Max and Nux chained together. It's fine approaching a movie as just a popcorn flick but don't even try to find things in there that don't exist. Personally, I find it hard not to ask questions when watching a movie.
