For the PS3, I'd have to give it to Uncharted for the moment. The environments are so lush and it looks gorgeous.
Mario Galaxy is a given for the Wii.
Halo 3 is sort of a given for the 360, too, unless Mass Effect becomes everything it's been hyped up to be.
