What is up with the PS3 changing resolution once you go into a game? I'm using HDMI to a monitor outputting at 1080p, but when I load up some games, the resolution changes to 720p (while others decide to stay at 1080).

Not every game scales to 1080p. In those instances, the PS3 switches to 720p output. In addition, some games render differently when in 1080p mode, and the developer felt that 720p mode looked better, so it get's defaulted to. In those cases, you can force the game to run in 1080p mode by turning off 720p support on the PS3.
Because those games supports maximum 720 p. It´s not the ps3, those games can´t be upscalled to 1080 p.

| CGI-Quality said: Not all PS3 games upscale to 1080p. Any PS3 game that either remains at 1080p or switches from it, back to it, is either native 1080p or can upscale into 1080p. Otherwise, most PS3 games can only output at 720p, regardless of a 1080p native HDTV. |
Actually, you can force the games to play at 1080p by disabling other resolutions. That's why I find this weird: it can upscale, but won't do it unless you force it to.
BTW, what's vg$?

It is money you earn by being a quality poster. You can redeem it for video games and peripherals at the VGC store.

Here is the store. If you simply insert your membership information instead of a credit card, it automatically deducts the money from your VGC$ account.
