Other than Final Fantasy II (NES), III (NES) and V (SNES), they all blend together. Even FF III (NES) and FF V (SNES) are clones. The only original Final Fantasy is II (NES).
Final Fantasy games all have different story's and are set in different worlds, but in many final fantasy games you will find similarities such as Chocobo's, some of the enemies are the same like the blobs and then theyre are the fire balls can't remember there names, a few of them have characters called biggs and wedge but other than small similarities, they are all different story wise .

FFVIII-FFXII -- wrong. More like mediocre story, same characters with different names.
And yeah, each Final Fantasy is it's own game (not counting spinoffs). They're essentially new IP's but have the FF name stuck on them because they know that will increase sales 5 billion percent. Add a character that resembles Cloud or sephiroth and that 5 billion percent triples.

Final Fantasy VIII's story was more interesting than Final Fantasy VII's.
Final Fantasy games have always been "New IPs" with a few exceptions.
The first FF game I played was Crisis Core, and I loved it...closest I've ever come to crying in a video game. So then I played VII, and it became my 2nd favorite game of all time (even though the tech is so outdated). Now I'm playing X and like it even better than VII. I also started on VI for the GBA. I just can't get enough of them lately.
The stories and characters are always top notch. I'm just wondering around in X right now right before the final battle, simply because i love the characters so much that I dont want the story to come to an end.
Anyway, back to the question - the stories, characters, battle systems, environments....all different (though many of the battle systems are based on previous ones). I don't see the games being any more similiar than most franchises - Mario, Zelda, Metal Gear...whatever. Guess I dont see the problem here....
