Tales of Vesperia MMOnline with continuous updates and a new sprawling story mode with co-op every year. Perfection would have a name.

GOTY Contestants this year: Dead Space 2, Dark Souls, Tales of Graces f. Everything else can suck it.
I'm going to agree with the OP and say LBP. There's just so many levels; it's really impressive to see what people can come up with. Plus, it's great fun to play with friends in Create mode... I've never made anything useful in there, but it is fun!
I also like to see what I can come up with in the level creator. Sometimes, I'm surprised by how well things work out!
EDIT: Actually, I think it's a tossup between LBP and Age of Mythology. As much as I love Age of Empires II, I have to say that I've had a ton of fun with AoM, and I think I'd spend more time with that in the long term than AoE II.

Fallout 3 & Elder Scrolls IV: Oblivion. These games are endless :P
Other games include FFVII, Super Mario World, Super Mario Bros, Luigi's Mansion, Suikoden and Halo 3 (when I finally get another 360)

There isn't a single game I could always play without getting bored or tired of it at some point but the closest game to playing forever would be:
The Sims Complete Collection... It's already an endless game (I've been playing Sims since I was 12) and with some custom contents, mods and hacks, you can do pretty much anything you want. Creativity at it's best.
Forever without getting bored...yeah I'm going to have to say none. Is LBP that much fun? I got it for Xmas and played it the next day but I haven't gotten in a mood to play it again.
I could play Chrono Trigger, Final Fantasy 6,9, Tales of Symphonia, Mario Galaxy, and Tetris Attack the longest before getting bored but would get bored after a few months if not weeks. A few years ago I would have said the original Super Mario Bros (NES) as I used to play that game for hours on end but once I could beat the game in under 6 minutes I got bored with it.
