I agree with you, Rubang, and I actually read OEL manga when it strikes my fancy. It's just that in the specific case of that specific show, things tend to get out of hand. I prefer to just avoid the fighting.

I was ready to kick Shinji in the nuts, strangle him, and drop him off a cliff by halfway through my first watching of that anime. Well I'm not gonna try to convert you or anything, but I feel I should explain why I can watch the entire series and all the movies over and over and am madly in love with it. The more stuff I watch by Gainax, the more I love Evangelion, and my Gainax love is now in a mad infinite spiral.
To appreciate anything made by Gainax you have to realize that they're the biggest nerds on the planet, and are really playing with nerd history for their nerd fans, so anything they make needs to be looked at through a nerd history lens. (They started as indie nerd fans themselves, and will never let us forget.)
They got their start by making DAICON III in 1981 (link) and DAICON IV in 1983 (link). They were fanmade opening videos for science fiction conventions, and DAICON IV is probably my favorite couple minutes of anime ever made (it starts with a quick recap of DAICON III and then becomes AN ELO MUSIC VIDEO). The word daicon is a kanji combination that just means Osaka-Convention, but the word "daicon" means raddish, so that's basically the whole joke right there.
Then they made live action comedies for a bit, spoofing Godzilla and Ultraman and the like (with the director of Evangelion, playing Ultraman). Then they made anime for a while. Then they made Otaku no Video, which is half anime and half live action mockumentary. It makes fun of anime, otaku, and themselves, as it tells a hilarious exaggerated version of their own history, detailing how becoming otaku ruined their jobs and lives and relationships. It's hilarious, only 2 episodes, and I highly recommend it if you can find it. The documentary portion tries to paint all otaku as freaks and criminals who masturbate all day. They even interview a guy who speaks English, but change the subtitles to other stuff behind his back.
Then they made Evangelion and FLCL, which are both full of ridiculous amounts of intertextuality (like critical darling Cowboy Bebop), and how much you get out of all this depends on the viewer. For some, it can make it into like the Ulysses of anime or the Tale of Genji of anime, and for many others these two can come off as just meaningless strings of pop culture references, the way many people see Family Guy.
Personally I love how it's basically a backwards-mecha show. The "robots" are organic, the pilots are plugged into a womb instead of just walking into a computer terminal in the head, and the mechas and humans fight for control or even become a 3rd combo-entity. It might seem lame now, but that was totally awesome in 1995, after decades of shows like Mazinger Z, Getter Robo, Voltron, Transformers, and several Gundams. This was right after Power Rangers came to America, and right when Dragon Ball and Sailor Moon came to America, so Evangelion was not only the most original mecha show, but one of the most mature at that time, especially since instead of teaching the kids about love and friendship after each battle it chose to tackle child developmental problems, sexual trauma, and depression, which end up being more important than the action. That's either really awesome and original or totally boring and a horrible plot twist that ruins an otherwise great action show.
If you actually read this whole post, feel free to recommend me a show you like and I'll watch it. I swear it doesn't need to be pompous high art for me to enjoy it. I mostly watch anime films and I know you have good taste in those from other threads, but when it comes to shows you've watched way more than me. I've only seen all of NGE, all Cowboy Bebop, all Great Teacher Onizuka, all FLCL, all Death Note, tons of Naruto, some Dragon Ball Z, some Sailor Moon, some Paranoia Agent (love it so far).
What do you think about Satoshi Kon's work? Have you seen Perfect Blue? Now HE makes schizophrenic anime.

I recommend you read the GTO manga, Rubang. It is the bee's knees, and the anime is tame in comparison.

I did in fact read that whole post, and for the record I love FLCL. It's one of my all-time favorites. But here's some stuff you may want to watch:
-If you want to see something smart, witty, and completely different from everything you've watched so far, check out Spice and Wolf. Just don't expect action.
-If you want something that's pretty nuts and gorey, but still manages to be funny and artistic, the very unique pulp-fiction style Baccano is a great one to check out.
-If you are secure in your sexuality and don't mind a good romance, Toradora is an excellent romantic comedy.
-If you are looking for something similar to Cowboy Bebop, there are 2 other space western anime out there: Outlaw Star and Trigun. Both are very good.
-If you want to see a serious mecha drama without all the emo crap, but still a unique approach to the genre, check out RahXephon.

I'll probably drop half of those when I get to watch 2-3 eps. of each.
I'm only watching FMA. But 2 episodes in, I've got mixed feelings.
Episode 1 was great, bit weird seeing characters that are supposed to be dead alive again (didn't know it was a retelling of the first season).
Episode 2 was a bore really, I've seen the majority of the content from the first time around BUT the Edward short man jokes aren't really funny this time around (the initial haha/fun factor is gone).
Hopefully it picks up with a deeper plot, but I doubt it'll surpass the first series for me.
