I'd show them fun and accessible games such as:

Fight Night Round 2
Half-Life 2
Earthbound

And agreed with the distinction between ICO and SotC. ICO is a fantastic experience, but SotC definitely seems more accesible, at least to someone first being introduced to the medium.

I'm not sure I could persuade someone following my tastes, my favourite games were quite successful, but they aren't the most successful and with the widest possible audience:

Thief II
Duke Nukem 3D
Myth II
Gothic
(Note that my top 5 and top 10 lists vary with time, as I equally like some games and often choose one instead of the other depending on my mood, the memories of the moment, etc)

Well, you'll wanna make a good first impression. The orginal LoZ isn't going to convince anyone.

I'd show them something like Guitar Hero or Wii Sports first, to get them interested, then move onto something like MGS4 or GTAIV to show them how sophisticated games can be. THEN, I'd show them the classics.

 

MGS4 and GTA4 are "sophisticated?" Shudder. I'll remember that the next time I have a random impulse to shoot hookers, I'm actually expressing my sophistication.

Well if it's someone who's never played videogames before, like the OP states, then they'd prolly be:

Wii Sports
Wii Fit
Wario Ware Smooth Moves
Mario Kart Wii
Super Mario Galaxy

Because those are the only kind of games such a person would be interested in, at all.
Games like Zelda, Halo, GTA, MGS and whatnot are just not gonna cut it for someone who's never touched a videogame before, that's something I've experienced hands-on several times.
