Good call, I'll keep the salt thing in mind.
And yeah, Alton is awesome and I love Good Eats. The only thing I don't like about some of his recipes is that you have to prepare a day or more in advance (the worst is the wings recipe). Sometimes I just want to wake up and make french toast!
