Ontopic: It's probably cheaper to make them that way. I'd love to see a square sausage though. Square sausage hot dogs sound good...

I think the intestine thing answers the question. My mom made Korv (a swedish sausage) one Christmas. It was one of the grossest things I ever witnessed (no wonder I'm a vegetarian).
