Hey, I just stumbled accross this website, I don't think it's ever been posted here before.
It has vidoes and photos of games that were in their beta or prototype stages. Some of the changes are pretty large, my fav that I've seen being Dark Cloud and FFX, but they even have Ico and Too Human on there. Even cancelled games are listed and detailed. Sometimes it's basically only a text description though. Anyways, here's the link, hope you guys enjoy.
