( 17 backs over 1000 rushing yards is NOT realistic....). This is especially bad for tackles and it's about impossible to have one of your defender rank well in tackles...(some guys in others teams make more tackles than my whole team during a game...)

If it's like most franchise games, the simulated games always use the default stats (so 15 min quarters).

Yeah that's what I think happens.
It's funny that no matter what I do every season my team is guaranteed to be the worse offense and the best defense because I play 5 min quarters whereas the sim seems to play 15 min quarters so there are always less yards gained in my games...
The season with 17 Hb over 1k yeards I was playing on custom, rush and pass at pro level and rush and pass defense slightly harder than all-pros...
Kinda stupid for a game that has been selling for over 15 years anyway, you would think they would adapt stats of simulated games based on quarters lenght...( and if I played 15 min quarters I guarantee my team would be best offense and worse defense by far...).
From what I have seen I think I should be playing 7 or 8 min quarters lenght games to have stats that match those from the AI simulated games...( or longer but take more time before snapping).
PS : and yeah it's stupidly hard to rush on all-pros. I think this season on all pros after 11 games Shawn Moreno only has 2 games over 50 yards rushing ( but he's about to beat Jerry Rice record of most catchs in one season lol, not my fault the stupid AI keeps blitzing and I end up doing a quick pass to my HB..).
