In some regions, including mine, it's called "formaggio coi grilli", "cheese with crickets" because those particular maggots jump like crickets.
A great uncle of mine liked to tell that he chased them with a breadstick, to disgust my grandpa, that hated almost all normal cheeses too, besides being quite finicky
