Having played in band from elementary school through college level I can definitely hear differences between different groups, but unfortunately I haven't been able to attend live performances by professional orchestras all that often. :(

 I've heard that our local Phoenix symphony orchestra is kinda mediocre compared to the real ones.  They're the only ones I've heard, and they sounded pretty good to me.  I hope I get to hear more orchestras in the future though...

Can't say much about different orchestras. Growing up all the classical music I heard was the LSO. I suppose that was very common. Two of my favorite pieces have been:

Pictures at an Exhibition
Mozart's Requiem

And of course, who doesn't like "Die Walküre"?
