The Smash Bros game on the standard 3DS (the demo even forces a shutdown of the whole console when you finish playing, can't imagine the amount of resources that thing eats!).

Star Wars: Rogue Squadron: Rogue Leader 2 on Gamecube.
I have to say RE2 on N64. Not because of the graphics, but it`s impressive how they were able to fit a 1,4 gb game on just 64mb.

You are quick. Easily the most impressive game per hardware on the Wii U, could even be compared to BoTW if the framerate issues are there in its released state. Massive seamless world at a practically solid 30 fps with online and well over 300 hours of content. Xenoblade X killed it.
For the consoles I've most played:
SNES: Donkey Kong Country 2 (that thing is still beautiful) and Star Fox. Actually, SNES games have aged very well.
PS1: Spider-Man.
PS2: God of War 2, Shadow of the Colossus, Black and Metal Gear Solid 3.
PS3: The Last of Us, GTA 5 and Beyond: Two Souls.
3DS: Resident Evil Revelations and Smash Bros.
Xbox One: Ryse: Son of Rome and Forza Horizon 3.
