I don't think you are even trying to look on it from SE business side. Consider this: It was your company, you had been dedicating a whole decade to a project, you created an amazing engine and a lot of your work can easily be used again after you finally deliver your long due project, wouldn't you try to make more from it than just that? Would you simply scratch it all and start all over again with something else completely new right off the bat? SE does what it does for money, and as far as yes innovations and new stuff can and do bring a lot of money and interest for them, when you invest so much time and work on creating something like this you wouldn't just dispose of it after your initial vision is delivered. That's why we have sequels/trilogys, spin-offs, dlc, expansions and stuff like that.
I just can't see them scrapping it all over to move completely to FFXVI so soon, because Final Fantasy is different from most franchises, because when it moves a number in the name it's like creating a new IP. Now they even have FFVIIR unlike last gen so it won't feel as stagned as last generation did (specially if it's good).

You want the business side?
The FFXIII sequels made less and less money. Even if they were profitable, due to assets reuse, they left a bad taste in people's mouths as they're generaly regarded as lesser products of diminished quality, for various reasons.
With FFXV's completion, they will have the option of using a finally completed Luminous engine for XVI or going with the now familiar UE4. Why would they waste time and money on sequels that would garner much less excitement than a full main series game, especially when XIII already soured people on sequels to a main series game?
Making direct sequals, taking into account the recent past and its events, is not as logical as it might seem. Not to mention that SQE have said themselves that it is a game with a self contained story. That is the whole reason for the changes they introduced in that game. The removal of Stella being a significant one.
Another thing is that FFVIIR is already a product that will make them heaps of money, not only because it is very hyped and highly expected, but also because it'll be divided into at least 3 products. They will cash in heavily with that one, which also allows them to move onto FFXVI for that reason, along with the other ones I mentioned above.
