I'd be surprised if those two methods weren't a robot dinosaur and some sort of generic fast travel system. Maybe they're being 'vague' because they want to show rather than just tell?

World of Warcaft got mounts so very, very right.  Collecting mounts was one of the reasons I played the game.  One of the first on my server with a dragon and, even more fun, a mammoth.  Guildmates used to get me to ride them around the cities.  People love interesting and unique mounts.  More developers need to realize that.

Wasn't there an interview at or around Gamescom where they confirmed that larger organic life was extinct? I'd swear that this was confirmed somewhere.

Probably a non-sentient bipedal robot dinosaur i.e Metal Gear Rex. 

I'd say gliders and riding smaller dinosaurs.
