Soul Calibur, Resident Evil 4 and Devil May Cry are the games that come to my mind right now.

Soul Calibur was just a boosted up Soul Blade.  Resident Evil 4 was just Dino Crisis with better graphics.  Devil May Cry was just a stylish action game with fast gameplay mechanincs.  They could have changed up Soul Reaver and made that game. 

The scope of Resident Evil 4 doesn't make it possible on other systems. Splinter Cell is another one because of the lighting mechanics (just look at the poor mans DS version of Chaos Theory)...

 

GTA San Andreas wasn't possible too. 

The jump from PS1 to PS2 let much more room for improvement than PS2 to PS3, I think.

I'm just playing devil's advocate with my PS1 vs. PS2 progression argument.  There has definitely been huge steps taken between PS1 to PS2 and PS2 to PS3.  The thing is, this gen began like most gens--with minor improvements over the previous gen.  Sometimes, the progression is so slow that you don't even see it taking place.  You look at yourself in the mirror and you see the same person you saw yesterday.  You don't notice that you're not the same person you were a year ago, five years ago, or ten years ago until you look closely.

Yeah, the beginning of this gen (with NBA Street Homecourt, Def Jam Icon, etc.) don't appear to be great improvements but when you look at the improvements with online, user interface, physics, lighting, connectivity, motion control, artificial intelligence, media integration, resolution, etc., it's almost like a new generation has occured in the middle of this generation.  I DO think there's been a pretty good bit of advancement this gen.

The Wii U looks almost current gen because it's starting point is the best games of this gen.  While this gen is just winding down, the Wii U is just getting started.  We won't see the leap until years down the road and that leap will be so gradual, we won't notice it then, either.  It will be when we compare the next couple of years to the beginning.

 

Conversely, you can look at an entire era like the 16-Bit era or the 32-Bit era.  Despite all of the improvements made throughout their time on the market, a Genesis game released in 1995 and a Genesis game released in 1991 just looks like "A Genesis game".  Same with the PS1, Nes, N64, Gamecube, etc.  It all depends on where you're looking from.
