I don't get why isn't anyone asking for the FM versions instead of the regular ones. If we're to get an HD collection of the PS2 games, why shouldn't we get the most complete versions? The amount of extra content that KH:FM and KH:FM+ got is staggering (KH:BBS FM only had little extra content added).

It's not always PS360. Quite the contrary actually. The Silent Hill Collection, the Splinter Cell Collection, Tekken Hybrid, the Prince of Persia Collection and the Tomb Raider Collection are only on the PS3. The only HD collection by Square-Enix is PS3 exclusive so I don't think we can assume anything. If they want to concentrate the fanbase on a single platform they will have to choose one console which will most likely be the PS3 of course because of Japan.

This. I think the main reason why most HD collections are Ps3 exclusive is because they just port the PS2 versions with HD textures. And porting from PS2 to PS3 seems a rather easy task in comparison to port it to the X360 architecture.
